- 1 cup old-fashioned oats
- 1/2 cup cottage cheese (blended until smooth)
- 1Â medium ripe banana (mashed)
- 2 tbsp honey or maple syrup
- 1/4 cup almond butter (or peanut butter)
- 1/4 cup chopped walnuts (optional)
- 1/4 cup mini chocolate chips (optional)
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- Pinch of salt
Instructions
- Combine Ingredients:Â In a large mixing bowl, combine the oats, mashed banana, blended cottage cheese, honey, almond butter, vanilla extract, cinnamon, and salt. Stir until everything is well mixed.
- Add Mix-Ins:Â If using, fold in the chopped walnuts and mini chocolate chips.
- Shape into Balls:Â Scoop out tablespoon-sized portions of the mixture and roll them into balls with your hands. Place the balls on a parchment-lined baking sheet.
- Chill to Set:Â Refrigerate the energy balls for at least 30 minutes to firm up.
- Serve and Store:Â Enjoy immediately or store in an airtight container in the refrigerator for up to 5 days.

- You can customize the mix-ins by adding other nuts or dried fruits.
