Ingredients

  • 1 medium spaghetti squash
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Place the squash halves cut-side down on a baking sheet and bake for 40 minutes or until tender.
  4. Once cooked, use a fork to scrape the squash into strands.
  5. In a large bowl, mix the squash strands with cheddar cheese, sour cream, garlic powder, onion powder, salt, and pepper.
  6. Transfer the mixture to a baking dish and top with Parmesan cheese.
  7. Bake for 20 minutes or until the cheese is bubbly and golden.
  8. Garnish with chopped parsley before serving.
