This salmon recipe is crispy on the outside while tender and flaky on the inside. Searing it in a hot pan allows the skin to get crispy.   • Salmon: Atlantic or wild-caught salmon with the skin on.
  • Butter: I use unsalted, if you use salted you may want to leave out the salt in the herb butter.
  • Garlic: Fresh garlic cloves.
  • Italian seasoning: I like to use dried for this.
  • lemon: Fresh lemon juice and zest really brightens up the dish.
  • Parsley: I recommend using fresh parsley here.

How to make herb salmon

  • Step 3: Roll the plastic wrap around the butter and mold it into a roll and chill.
  • Step 4: Place the salmon on a cutting board and pat dry with a paper towel, rub a little olive oil over the top, and season.
  • Step 5: Heat a cast iron skillet on medium-high heat and place salmon fillets skin-side up.
  • Step 6: Gently flip the salmon filets and cook until done, add a slice of lemon garlic butter on top of the salmon and serve with lemon wedges.

Recipe Tips

  • The best pan is a cast-iron skillet or stainless steel pan as it conducts heat evenly. A nonstick skillet will work too but it doesn’t get as hot so the skin won’t get as crispy.
  • I recommend using a fish spatula, not only is it great for fish but you can use it on my Southern Hoe Cakes, One Pot Green Beans, and Potatoes.
  • Once you place the salmon in a hot skillet don’t touch it, or you won’t get that crispy skin.
