Ingredients
- 1Â lb beef chuck, cubed
- 2Â carrots, chopped
- 1Â onion, diced
- 3Â cloves garlic, minced
- 2Â potatoes, cubed
- 4 cups beef broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
Instructions
- Heat olive oil in the Dutch oven over medium-high heat.
- Add beef and brown on all sides.
- Add onions, garlic, and carrots. Sauté for 3 minutes.
- Pour in beef broth and add potatoes, salt, pepper, and thyme.
- Cover and simmer for 1 hour.
- Check seasoning and serve hot.
Notes
- You can substitute beef with chicken for a lighter version.
- Add more broth if you prefer a soup-like consistency.
- Store leftovers in an airtight container for up to 3 days.
