Ingredients needed

  • Apples: Any kind of appls works great in this recipe or use a can of apple pie filling.
  • Sugar: granulated for the filling and the crust. Powdered sugar for the glaze.
  • All purpose flour: To thicken the filling and the crust.
  • Spices: Cinnamon, nutmeg, and salt
  • Butter: Keep it cold and cut it into tiny pieces so it works into the crust dough easier.
  • Eggs: Yolks and whites separated.
  • Milk: For the glaze and the crust.

How to make apple pie bars

  • Step 1: In a large mixing bowl, add sliced apples, sugar, flour, cinnamon and nutmeg. Toss together with tongs and set aside. 
  • Step 2: In a separate large bowl, add flour, sugar, salt and whisk together. Add slices of cold butter and use either your fingers or a pastry cutter to mix in the butter. 
  • Step 3: Once butter is mixed in well, add egg yolks and milk. Mix together until you start to form a crust. 
  • Step 4: Once the crust dough starts to form, lightly flour your work surface on a cutting board and place the dough ball on it. Split into two equal balls of dough. 
  • Step 5: Lightly flour work surface if needed, and use a rolling pin to roll out one of the balls of dough. Add a bit of flour to the top if it’s too sticky.
  • Step 6: Lightly flour and butter your pan. Transfer the crust into the pan and use your fingers to press it down to cover the pan. 
  • Step 7: Use a pastry brush to coat the crust with egg whites. 
  • Step 8: Transfer the apple mixture and spread out on top of the crust. 
  • Step 9: Roll out the other dough ball and carefully transfer on top of the apple filling. Brush this second crust with egg whites as well.
  • Step 10: Bake until golden brown.
  • Step 11: Mix the powdered sugar and milk together in a small bowl to make the glaze.
  • Step 12: Remove baked dessert from the oven, let cool a bit and spread the glaze all over. Cut into bars, serve, and enjoy!

Recipe Tips

  • It can be helpful to line the bottom of the pan with parchment paper if you don’t want to grease it. 
  • I recommend using a jelly roll pan. but a 9×13 baking dish can also be used.
  • When working your dough, you still want to see small bits of butter throughout. The bits of butter help make this a flaky crust as the butter makes little steam pockets in the dough as it bakes.
