Feta & Cranberry Rigatoni Salad with Lemon Vinaigrette

Ingredients:

250 g rigatoni pasta

1/2 cup dried cranberries

100 g feta cheese, crumbled

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

3 tablespoons olive oil

Juice of 1 lemon

1 teaspoon Dijon mustard

Salt and black pepper, to taste

Directions:

Cook rigatoni according to package instructions until al dente. Drain and let cool slightly.

In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to make the vinaigrette.

In a large bowl, combine rigatoni, cranberries, feta, red onion, and parsley.

Drizzle with the lemon vinaigrette and toss gently to combine. Serve chilled or at room temperature.
