Brussels Sprouts with Cranberry-Orange Glaze

Ingredients:

500 g (1.1 lb) Brussels sprouts, trimmed and halved

2 tablespoons (30 ml) olive oil

Salt and pepper, to taste

1/2 cup (60 g) fresh or frozen cranberries

1/4 cup (60 ml) orange juice

1 tablespoon (15 g) honey or maple syrup

1 teaspoon (5 g) orange zest

1 teaspoon (5 ml) balsamic vinegar

Directions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Toss Brussels sprouts with olive oil, salt, and pepper. Roast for 20–25 minutes, flipping halfway, until golden and crispy on the edges.

Meanwhile, in a small saucepan, combine cranberries, orange juice, honey, orange zest, and balsamic vinegar. Cook over medium heat for 6–8 minutes, until cranberries burst and glaze thickens slightly.

Toss roasted Brussels sprouts with cranberry-orange glaze and serve warm.
