Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease or line a muffin tin or ovenproof baking dish.
  2. In a large bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, parsley, oregano, basil, cumin, paprika, chili flakes, salt, and pepper. Mix until just combined (do not overmix).
  3. Take a portion of the mixture and press into the bottom and up the sides of each muffin cup (or form round patties with a well in the center if using a baking dish).
  4. In a separate bowl, mix mozzarella, feta, sun-dried tomatoes, and olives. Spoon this mixture into each meatloaf cup, pressing gently.
  5. Cover filling with a bit more meat mixture, then sprinkle with shredded mozzarella.
  6. Place in preheated oven and bake for 25–30 minutes, until meat is cooked through and tops are golden.
  7. While cups bake, prepare sauce in a skillet: bring beef broth, cream, Dijon, garlic powder, salt, and pepper to a simmer until slightly thickened.
  8. Pour sauce into baking dish around meatloaf cups (or spoon some on top), then broil for 3–4 minutes until cheese is bubbly and browned.
  9. Remove from oven, sprinkle with fresh parsley, and serve warm with rice, mashed potatoes, or flatbread.
