
Ingredients:
2 lbs (900 g) baby potatoes, halved
3 tbsp (45 ml) olive oil
2 tbsp (30 ml) lemon juice
3 garlic cloves, minced
1 tsp (2 g) dried oregano
1 tsp (2 g) dried thyme
Salt & black pepper, to taste
1/2 cup (75 g) crumbled feta cheese
Fresh parsley, chopped (optional)
Directions:
Preheat oven to 400°F (200°C). In a large bowl, toss potatoes with olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Spread evenly on a baking sheet.
Roast for 35–40 minutes, turning halfway, until golden and crispy. Transfer to a serving dish, sprinkle generously with feta and parsley, and serve hot.
