I love that you only need a handful of ingredients for this recipe and they’re all common pantry staples that require minimal prep and come together quickly.

Simple Ingredients

  • Fully cooked : Browning the sausage before adding to the dish gives the meat a little caramelized coating. 
  • Baby creamer potatoes: I use a mixture of red and white baby potatoes. You could even use diced sweet potatoes or small Yukon gold potatoes. Any combination of potatoes or a single type of potato will work. Different potatoes may require more or less cooking time.
  • Canned green beans: thawed frozen green beans could also be used. You can use fresh green beans too, trimming the ends first.
  • Onion: White or yellow.
  • Herbs and seasonings- minced garlic cloves, Italian seasoning, salt, black pepper, red pepper flakes and fresh parsley
  • Olive oil

How to make sausage green bean potatoes

  • Step 1: Prep ingredients by slicing sausage, washing and dicing the potatoes, and roughly chopping the onions. Combine the sausage, potatoes, green beans, onion, garlic, olive oil, and seasonings. Stir to coat everything.
  • Step 2: Dump the mixture in a prepared 9×13-inch baking dish that’s been sprayed with cooking spray. Bake in the oven and garnish with parsley, if using, before serving.

Recipe Tips

  • Serve this with your favorite pork chops for a lovely easy dinner idea. 
  • Around halfway through the baking time, be sure to mix the contents of the baking dish around so everything bakes evenly. 
  • Instead of green beans, you can use a different veggie like brussels sprouts, broccoli florets or carrots. 
  • Store leftovers in an airtight container or a casserole dish with a lid in the fridge for up to 4-5 days. Leftovers can frozen in a freezer-safe container or freezer-safe bag for up to 2 months. Thaw the frozen meal in the fridge overnight before reheating in a baking dish or on a sheet pan in the oven.
  • Reheat leftover green bean potato casserole in the microwave or in the oven. If drying out, add a splash of chicken broth to keep everything moist while reheating.
