Ingredients

  • 1 medium butternut squash, peeled and cubed

  • 4 oz goat cheese, crumbled
  • 2 tbsp honey
  • 1 tbsp fresh thyme leaves

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 25-30 minutes until tender and slightly caramelized.
  4. Remove from oven and transfer to a serving dish.
  5. Sprinkle goat cheese over the squash.
  6. Drizzle honey on top.
