Ingredients

2 large sweet potatoes, peeled and cut into 1-inch cubes

2 tbsp olive oil

2 tbsp pure maple syrup

1/2 tsp smoked paprika (optional)

Salt and black pepper, to taste

1/2 cup crumbled feta cheese

1/4 cup walnuts, toasted and roughly chopped

Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Toss sweet potato cubes with olive oil, maple syrup, paprika, salt, and pepper.

3. Spread evenly on the prepared baking sheet.

4. Roast for 25–30 minutes, flipping halfway, until caramelized and tender.

5. Transfer to a serving platter.

6. Sprinkle with feta and toasted walnuts.

7. Drizzle with extra maple syrup before serving warm.
