
Ingredients
- 1 ½ lbs (680 g) ground beef (or beef/lamb mix for more Mediterranean flavor)
- 1Â small onion, finely grated
- 3Â cloves garlic, minced
- ½ cup breadcrumbs (or panko)
- 2 tbsp milk
- 1Â large egg
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp ground cumin
- ½ tsp paprika
- ½ tsp chili flakes (optional, for a little heat)
- Salt & black pepper to taste
- 1 cup mozzarella cheese, shredded (for filling)
- ½ cup crumbled feta cheese
- ¼ cup sun-dried tomatoes, chopped
- ¼ cup black olives, chopped
- ¾ cup mozzarella cheese, shredded (for topping)
- Fresh parsley, chopped (for garnish)
- 1 cup beef broth (for sauce)
- ½ cup heavy cream
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- Salt & pepper to taste

Instructions
- Preheat oven to 375°F (190°C). Lightly grease or line a muffin tin or ovenproof baking dish.
- In a large bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, parsley, oregano, basil, cumin, paprika, chili flakes, salt, and pepper. Mix until just combined (do not overmix).
- Take a portion of the mixture and press into the bottom and up the sides of each muffin cup (or form round patties with a well in the center if using a baking dish).
- In a separate bowl, mix mozzarella, feta, sun-dried tomatoes, and olives. Spoon this mixture into each meatloaf cup, pressing gently.
- Cover filling with a bit more meat mixture, then sprinkle with shredded mozzarella.
- Place in preheated oven and bake for 25–30 minutes, until meat is cooked through and tops are golden.
- While cups bake, prepare sauce in a skillet: bring beef broth, cream, Dijon, garlic powder, salt, and pepper to a simmer until slightly thickened.
- Pour sauce into baking dish around meatloaf cups (or spoon some on top), then broil for 3–4 minutes until cheese is bubbly and browned.
- Remove from oven, sprinkle with fresh parsley, and serve warm with rice, mashed potatoes, or flatbread.
Notes
- For a spicier version, add more chili flakes.
- These meatloaf cups can be made ahead and reheated.
