**Ingredients:
For the Cowboy Butter Burger Patties:
1 ½ lbs ground beef (80/20 recommended)
1 tablespoon Worcestershire sauce
1 teaspoon Cajun seasoning
1 teaspoon smoked paprika
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon chili powder
½ teaspoon salt
½ teaspoon black pepper
For the Cowboy Butter:
4 tablespoons butter
4 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1 teaspoon Cajun seasoning
½ teaspoon smoked paprika
½ teaspoon chili flakes (optional)
1 tablespoon chopped parsley
For the Burger Tacos:
10–12 small flour tortillas
1 ½ cups shredded cheddar or Monterey Jack
1 cup shredded lettuce
½ cup diced tomatoes
¼ cup sliced pickles (optional)
¼ cup diced onions (optional)
For the Spicy Dipping Sauce:
½ cup mayo
¼ cup sour cream
1–2 tablespoons hot sauce
1 tablespoon ketchup
1 teaspoon Dijon mustard
½ teaspoon garlic powder
½ teaspoon paprika
1 teaspoon jalapeño juice (optional)
Pinch of cayenne
Salt to taste
Optional Toppings:
Hot honey
Crispy onions
Jalapeños
Extra cheese
**Directions:
Make the Cowboy Butter:
In a small saucepan, melt butter.
Add garlic, lemon juice, Dijon, Cajun seasoning, smoked paprika, chili flakes, and parsley.
Stir until glossy and aromatic. Set aside.
Prep the Beef:
Mix ground beef with Worcestershire, Cajun seasoning, paprika, garlic powder, onion powder, chili powder, salt, and pepper.
Form into 10–12 loosely shaped mini balls.
Cook the Smashed Burgers:
Heat a skillet or griddle over medium-high.
Place a tortilla on the skillet, lay a beef ball in the center, and smash it flat into the tortilla using a spatula or burger press.
Cook 2–3 minutes until browned.
Flip, top with cheese, and cook until melted.
Brush with Cowboy Butter:
Brush each taco generously with cowboy butter on both sides for rich, bold flavor.
Make the Spicy Dipping Sauce:
Whisk mayo, sour cream, hot sauce, ketchup, Dijon, garlic powder, paprika, jalapeño juice, cayenne, and salt until smooth.
Assemble the Burger Tacos:
Add shredded lettuce, tomatoes, pickles, and onions to each melted-cheese burger taco.
Drizzle with spicy dipping sauce or serve sauce on the side.
Serve:
Serve hot with extra cowboy butter or hot honey if desired.
