
Cowboy Meatloaf and Potato Casserole
Ingredients:
For the Meatloaf Layer:
1 ½ lbs ground beef
1 small onion, finely chopped
1/2 cup crushed Ritz crackers or breadcrumbs
1 egg
1/4 cup BBQ sauce (plus extra for topping)
1 tsp garlic powder
Salt & pepper to taste
For the Potato Layer:
3–4 cups mashed potatoes (leftover or freshly made)
1/2 cup sour cream
1/2 cup shredded cheddar cheese
Salt to taste
For the Topping:
1 cup shredded cheddar cheese
4–6 slices of cooked bacon, crumbled
2 green onions, sliced (optional)

Instructions:
1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. Mix meatloaf ingredients in a bowl: ground beef, onion, crackers, egg, BBQ sauce, garlic powder, salt, and pepper. Press mixture evenly into the baking dish.
3. Bake meatloaf layer uncovered for 25–30 minutes, or until mostly cooked through. Drain any excess grease.
4. Meanwhile, make mashed potatoes (if not using leftovers). Mix in sour cream, shredded cheese, and season with a little salt.
5. Spread mashed potatoes evenly over the cooked meatloaf layer.
6. Top with shredded cheese and crumbled bacon. Return to oven and bake for another 10–15 minutes, until cheese is melted and bubbly.
7. Garnish with green onions before serving.
