
Ingredients
- 1½–2 lbs flank steak or sirloin, sliced thin against the grain
- 2 bell peppers (red & green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- ¼ cup soy sauce
- 2 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tsp ground ginger (or 1 tbsp fresh, grated)
- ½ tsp black pepper
- 2 tbsp cornstarch
- 2 tbsp cold water
Optional additions
- Mushrooms
- Red pepper flakes (for heat)
- Splash of sesame oil at the end
Instructions
- Prepare steak
Slice beef thinly against the grain for tenderness. - Layer in crock pot
Add steak, peppers, onion, and garlic. - Mix sauce
Whisk beef broth, soy sauce, Worcestershire, brown sugar, ginger, and black pepper. Pour over contents. - Cook
- Low: 6–7 hours
- High: 3–4 hours
Until beef is tender.
- Thicken sauce
- Mix cornstarch and cold water.
- Stir into crock pot.
- Cook 15–30 minutes on High until thickened.
- Serve
Great over rice, noodles, or mashed potatoes.
Tips
- For extra flavor, quickly sear the steak before slow cooking (optional).
- If you like crisp-tender peppers, add them during the last 1–2 hours instead of at the start.
