Crock Pot Pepper Steak

Ingredients

  • 1½–2 lbs flank steak or sirloin, sliced thin against the grain
  • 2 bell peppers (red & green), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • ¼ cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp ground ginger (or 1 tbsp fresh, grated)
  • ½ tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Optional additions

  • Mushrooms
  • Red pepper flakes (for heat)
  • Splash of sesame oil at the end

Instructions

  1. Prepare steak
    Slice beef thinly against the grain for tenderness.
  2. Layer in crock pot
    Add steak, peppers, onion, and garlic.
  3. Mix sauce
    Whisk beef broth, soy sauce, Worcestershire, brown sugar, ginger, and black pepper. Pour over contents.
  4. Cook
    • Low: 6–7 hours
    • High: 3–4 hours
      Until beef is tender.
  5. Thicken sauce
    • Mix cornstarch and cold water.
    • Stir into crock pot.
    • Cook 15–30 minutes on High until thickened.
  6. Serve
    Great over rice, noodles, or mashed potatoes.

Tips

  • For extra flavor, quickly sear the steak before slow cooking (optional).
  • If you like crisp-tender peppers, add them during the last 1–2 hours instead of at the start.
