Ingredients Needed
- Chocolate chips: semi-sweet chips
- Dairy: a can of sweetened condensed milk and butter
- Mini Marshmallows
- Nuts: you can use either chopped walnuts or chopped peanuts

How to make rocky road fudge
- Step 1: Add semi-sweet chocolate chips, butter, and condensed milk to a large microwave-safe bowl. Microwave and stir.
- Step 2: Add vanilla extracts, some of the nuts, and the marshmallows to the mixture and stir to combine.
- Step 3: Line baking pan with parchment paper, leaving enough extra paper hanging over the sides to act as handles to help remove your fudge later. Transfer the melted chocolate mixture from the large bowl to the lined baking pan.
- Step 4: Add rest of the nuts to the top of the fudge batter and chill the batter in the refrigerator. Once chilled, remove the fudge from the fridge, cut, serve, and enjoy..
Recipe Tips
- This easy microwave Rocky Road Fudge doesn’t need a double boiler, but if you prefer to melt the chocolate chips and make the fudge that way, you can.
- One of the best parts of this recipe is that you can customize it to your liking. Prefer a little less nuts, use a little more marshmallows instead. Out of semi-sweet chips- try using milk chocolate chips.
- Make cutting the squares of fudge easier by wiping the knife blade in between passes through the fudge block. I also find it’s easier to cut if I remove the entire square of fudge from the square pan first. That’s why I add the extra paper off the sides to act as handles.
- Don’t wait to long to stir in the marshmallows and nuts or the chocolate mixture may start to seize or set before you can mix it all together.
