Fresh Pickled Cucumber Salad 

Ingredients:

4 medium cucumbers, thinly sliced

1 small onion, thinly sliced

1 cup white vinegar

½ cup water

2 tablespoons sugar

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

¼ teaspoon red pepper flakes (optional)

Fresh dill, chopped (optional but highly recommended)

Instructions:

Slice the Veggies:
Wash cucumbers thoroughly and slice them into thin rounds (you can peel them if you prefer).
Thinly slice the onion. Combine both in a large glass or ceramic bowl.

Make the Pickling Liquid:
In a separate bowl or small saucepan, mix together the vinegar, water, sugar, salt, black pepper, garlic powder, and red pepper flakes.
Stir until the sugar and salt dissolve completely. You can warm the mixture slightly to speed this up, then let it cool.

Combine & Chill:
Pour the pickling liquid over the cucumbers and onions. Add chopped dill if using.
Toss gently to coat everything evenly.

Marinate:
Cover and refrigerate for at least 1 hour, or up to 24 hours for deeper flavor. The longer it sits, the better it tastes!

Serve Cold:
Serve as a zesty side with grilled dishes, roasted meats, or even tossed into a sandwich or burger.
