
Ingredients
- 1 lb 450 g ground beef
- 2 tablespoons olive oil or butter
- 1 medium onion diced
- 3 medium potatoes peeled and diced into small cubes
- 1 red bell pepper diced
- 2 cloves garlic minced
- 1 teaspoon paprika
- ½ teaspoon salt or to taste
- ½ teaspoon black pepper
- ½ teaspoon dried thyme or oregano
- ¼ teaspoon chili powder optional
- ¼ cup beef broth or water
- 2 tablespoons ketchup optional, for slight sweetness
- 2 tablespoons chopped fresh parsley optional
Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Add the diced potatoes and cook for about 8–10 minutes, stirring occasionally, until they begin to turn golden and slightly tender.
- Add the onion and bell pepper. Cook for another 3–4 minutes until softened.
- Push the vegetables to one side of the skillet. Add the ground beef to the empty side and cook until browned, breaking it up with a spoon.
- Stir everything together. Add garlic, paprika, salt, pepper, thyme, and chili powder. Mix well.
- Pour in the beef broth and add ketchup if using. Stir and let simmer uncovered for about 8–10 minutes, until potatoes are fully tender and the mixture thickens slightly.
- Taste and adjust seasoning if needed. Sprinkle with parsley before serving.
