
Ingredients:
4 boneless, skinless chicken breasts (about 1 lb / 450 g)
½ cup (120 g) cranberry sauce
2 tbsp (30 ml) honey
1 tsp (5 g) dried thyme
2 tbsp (30 ml) olive oil
½ cup (75 g) crumbled feta cheese
Salt & pepper, to taste
Optional: chopped fresh parsley for garnish
Directions:
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
In a small bowl, mix cranberry sauce, honey, thyme, olive oil, salt, and pepper.
Place chicken breasts in the dish and pour the cranberry-honey mixture over them.
Bake for 25–30 minutes until chicken is cooked through (internal temperature 165°F / 74°C).
Sprinkle crumbled feta over the top and bake an additional 5 minutes until slightly melted.
Garnish with fresh parsley and serve warm.
