Rich and fudgy brownies with a refreshing mint chocolate twist.
Ingredients
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/4 tsp salt
- 1/2 cup chocolate chips
- 1 tsp peppermint extract
- 1 cup mint chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- Melt butter in a saucepan. Remove from heat and stir in sugar.
- Beat in eggs one at a time. Add vanilla and peppermint extract.
- Sift flour, cocoa powder, and salt together. Gradually mix into the batter.
- Fold in chocolate chips and mint chocolate chips.
- Spread batter into the prepared pan. Bake for 25-30 minutes.
- Let cool before cutting into squares.
Notes
- For extra mint flavor, add a few drops of green food coloring.
- Store in an airtight container for up to 5 days.
- Top with whipped cream or ice cream for serving.
