Let’s Gather The Ingredients

  • Puff pastry dough: you can use store-bought puff pastry or homemade
  • Italian sausage: I like to use spicy.
  • Herbs and spices: minced garlic, Italian seasoning, salt, black pepper, garlic powder, and paprika
  • Onion: White or yellow.
  • Eggs: For binding and the egg wash.
  • Breadcrumbs: Panko crumbs will also work
  • Parmesan cheese
  • Condiments: Dijon mustard, yellow mustard, apple cider vinegar, and honey

How to Make Sausage Rolls

  • Step 1: Add sausage, onion, garlic, egg, breadcrumbs, parmesan cheese, mustard, Italian seasoning, salt, and pepper to a large bowl. Stir to combine well. 
  • Step 2: Divide the sausage mixture into equal-sized balls and set aside. 
  • Step 3: Lightly flour your work surface to prevent the dough from sticking. Use a rolling pin to roll out a sheet of puff pastry. Cut into 3 sections using a pizza cutter or sharp knife. 
  • Step 4: Working with one sausage mixture ball at a time, use your hands to roll them into logs that are the same length as your puff pastry strips. You’ll need to do this to three of them.

  • Step 5: Lay the sausage log in the center of the puff pastry strips. 
  • Step 6: Carefully roll the puff pastry strip around each of the logs and pinch the seams together. Lay the sausage roll log seam side down. 
  • Step 7: Use a knife to cut each log into smaller pieces. 
  • Step 8: Cut small slits into the dough so the rolls can vent as they bake.

  • Step 9: Transfer sausage rolls to a parchment paper-lined baking sheet. Make an egg wash and cover the rolls with the egg wash before baking in a preheated oven. 
  • Step 10: While the rolls are in the oven, make the homemade honey mustard sauce in a small bowl and serve for dipping rolls into.

Recipe Tips

  • I used spicy Italian sausage, but any sausage you enjoy should work.
  • Seal them properly. Press seams firmly and place seam side down to prevent bursting while baking.
  • Brush logs with everything bagel seasoning or sesame seeds for extra crunch.
  • You can serve these Puff Pastry Sausage Bites with other dipping sauce options. If honey mustard isn’t for you, try regular Dijon mustard, yellow mustard, or go outside the box with marinara, ranch, or spicy ketchup.
  • Leftovers will keep in an airtight container, in the fridge, for up to 3-4 days. 
  • For best results, pop leftovers in the oven or Air Fryer to reheat until warmed through.
