
Ingredients :
Fresh Veggies:
- 1 head green cabbage, chopped
- 2Â carrots, diced
- 2Â celery stalks, diced
- 1 large yellow onion, chopped
- 1 bell pepper (any color), diced
- 3 cloves garlic, minced
Liquid & Seasonings:
- 4 cups vegetable broth
- 1 can (14.5 oz)Â diced tomatoes
- 2 tbsp extra virgin olive oil
- 2 tsp dried basil
- 1 tsp dried oregano
- Salt + pepper to taste
Optional Boosts:
- 1 cup chopped kale
- ½ tsp red pepper flakes
- 2 tbsp nutritional yeast (cheesy flavor)
Instructions:
- Sauté Aromatics:
- Heat olive oil in Dutch oven over medium heat.
- Add onion, garlic, carrots, celery, and bell pepper. Sauté 5 mins until softened.
- Build Soup:
- Stir in cabbage; cook 5 mins until slightly wilted.
- Add diced tomatoes, broth, basil, and oregano. Bring to boil.
- Simmer:
- Reduce heat to low. Cover and simmer 30 mins until veggies are tender.
- Season with salt, pepper, and optional red pepper flakes.
