- Preparing the Base:
- Preheat oven to 350°F (175°C).
- Mix 1 cup all-purpose flour, ½ cup softened unsalted butter, and ¼ cup powdered sugar until crumbly.
- Press into a 9×9 inch baking dish and bake for 15 minutes until lightly golden.
- Making the Filling:
- Beat 8 oz cream cheese and 1 cup granulated sugar until smooth.
- Add 2 large eggs, one at a time, beating well after each addition.
- Mix in ¼ cup lemon juice, zest of 1 lemon, and ½ teaspoon vanilla extract until fully combined.
- Pour over the baked crust and spread evenly.
- Baking:
- Bake for 25-30 minutes until the filling is set and slightly golden.
- Remove from the oven and cool completely before cutting into squares.
- Chill in the refrigerator for at least an hour before serving.
Notes
- For a lighter version, use low-fat cream cheese.
